Cranberry Brie Bites with Puff Pastry

Cranberry Brie bites are one of my favorite small appetizers for Thanksgiving because they look festive, taste rich, and are simple to serve. Each bite has flaky puff pastry, warm melted Brie, sweet cranberry sauce, and a small crunchy topping.

I like recipes that can be prepared before guests arrive, especially on Thanksgiving when the kitchen is already busy. These bites can be assembled in advance, kept cold, and baked shortly before serving. They come out of the oven warm, golden, and ready to place on a platter.

The first time I made cranberry Brie bites, I filled the pastry cups too much. The cheese melted over the sides, and several pieces stuck to the pan. They still tasted good, but they were messy. Since then, I use smaller pieces of Brie and only a spoonful of cranberry sauce in each cup.

That small change makes the bites neater and much easier to remove from the pan.

Why These Cranberry Brie Bites Work

These bites have a good balance of flavors and textures.

The Brie becomes soft and creamy as it bakes. Cranberry sauce adds sweetness and a little sharpness. Puff pastry turns light and flaky around the edges. Chopped pecans or walnuts add crunch.

They also look naturally festive. The deep red cranberry sauce stands out against the pale cheese and golden pastry.

I often place a tiny rosemary leaf on top after baking. It gives the bites a holiday look without needing a lot of decoration.

Cranberry Brie bites are useful for:

  • Thanksgiving appetizers
  • Christmas parties
  • Holiday brunches
  • Family dinners
  • Potlucks
  • Small gatherings
  • New Year’s Eve snack tables

What Do Cranberry Brie Bites Taste Like?

Brie has a mild, buttery flavor. When it is warmed, it becomes smooth and creamy.

Cranberry sauce is sweet, tart, and slightly fruity. It cuts through the richness of the cheese.

The puff pastry adds a light, crisp layer around the filling. If you add pecans, you also get a toasted, nutty flavor.

The result is sweet, salty, creamy, and flaky in one small bite.

Ingredients You Will Need

You only need a few main ingredients.

Puff Pastry

Use one sheet of frozen puff pastry.

Let it thaw in the refrigerator until it is soft enough to unfold. It should still feel cold.

Warm puff pastry becomes sticky and difficult to cut. Cold pastry rises better in the oven.

Brie Cheese

You will need about 8 ounces of Brie.

Cut it into 24 small cubes.

The white rind is safe to eat, so you do not have to remove it. I usually leave most of it on because it helps the cheese hold its shape while baking.

Cranberry Sauce

Use about 1/2 cup cranberry sauce.

Homemade cranberry sauce works very well, but canned whole-berry cranberry sauce is also suitable.

Try not to use too much sauce. About one teaspoon per bite is enough.

Chopped Pecans

You will need about 1/3 cup chopped pecans.

The pecans are optional, but they add a good crunch.

Walnuts can be used instead.

Fresh Rosemary

Fresh rosemary is optional.

Use very small leaves or finely chopped rosemary. A little goes a long way because rosemary has a strong flavor.

Egg Wash

Mix one egg with one tablespoon of water.

Brush this over the pastry edges before baking. It helps the pastry turn shiny and golden.

Optional Extras

You can also add:

  • Honey
  • Maple syrup
  • Orange zest
  • Chopped walnuts
  • Pistachios
  • Flaky salt
  • Black pepper

Which Cranberry Sauce Works Best?

Whole-berry cranberry sauce gives the bites more texture and looks better after baking.

Smooth jellied cranberry sauce can also work, but it melts more quickly and may spread over the pastry.

I prefer homemade cranberry sauce when I already have some prepared for Thanksgiving. It usually has a fresher flavor and less sweetness.

When using canned sauce, stir it first so it becomes softer and easier to spoon.

Do not add too much liquid sauce. A runny filling can make the pastry wet in the center.

Do You Remove the Rind from Brie?

You do not need to remove the rind.

The rind is edible and becomes soft in the oven.

Leaving it on also helps prevent the cheese from melting completely out of the pastry cup.

If you do not like the texture, you can trim away some of the thicker rind from the sides. Keep the cheese cold while cutting because cold Brie is much easier to handle.

I usually cut the wheel into strips and then into small cubes.

Before You Begin

Heat the oven to 375°F or 190°C.

Lightly grease a 24-cup mini muffin pan.

You can also use cooking spray, but do not use too much. A light coating is enough.

Keep the puff pastry in the refrigerator until you are ready to cut it.

Cut the Brie into small cubes and return it to the refrigerator while preparing the pastry.

Cold ingredients are easier to work with and help the pastry bake properly.

How to Make Cranberry Brie Bites

Step 1: Prepare the Puff Pastry

Place the thawed puff pastry sheet on a lightly floured surface.

Gently roll it out to smooth the fold lines.

Do not roll it too thin. You only need to make the sheet slightly larger and more even.

Cut the pastry into 24 equal squares.

The easiest method is to cut the sheet into six strips in one direction and four strips in the other direction.

The squares do not need to be perfectly identical. Slightly uneven shapes make the finished bites look homemade.

Step 2: Place the Pastry in the Pan

Place one pastry square into each cup of the mini muffin pan.

Press the pastry gently into the bottom and around the sides.

Do not stretch it too much.

The corners should point upward slightly. These corners become golden and crisp in the oven.

If the pastry feels very soft or sticky, place the pan in the refrigerator for 10 minutes before filling it.

Step 3: Add the Brie

Place one small cube of Brie in each pastry cup.

Do not use a large piece.

Brie melts quickly, and too much cheese can overflow into the pan.

The cheese should fill around half of the pastry cup.

Step 4: Add the Cranberry Sauce

Spoon about one teaspoon of cranberry sauce over the Brie.

Try to keep the sauce in the center.

Do not fill the pastry all the way to the top. Leave a little room for the cheese to melt and the pastry to rise.

Step 5: Add Pecans

Sprinkle a small amount of chopped pecans over each bite.

You only need a few pieces.

Too many nuts can cover the cranberry sauce and make the bites harder to eat.

Step 6: Brush with Egg Wash

Mix the egg with one tablespoon of water.

Brush the exposed pastry corners lightly with the egg wash.

Do not pour egg wash into the filling.

A thin layer over the pastry is enough to help it become golden.

Step 7: Bake

Place the pan in the heated oven.

Bake for 15 to 18 minutes.

The pastry should look puffed and golden around the edges. The Brie should be melted, and the cranberry sauce should look warm and glossy.

Check the bites after 14 minutes because ovens can bake differently.

Do not wait until the pastry becomes very dark.

Step 8: Cool Briefly

Remove the pan from the oven.

Let the bites rest in the pan for about five minutes.

This gives the cheese a little time to settle.

Run a thin knife around any bites that have cheese or sauce stuck to the pan.

Lift them out gently and place them on a serving platter.

Step 9: Add the Final Topping

Add a tiny rosemary leaf to each bite if desired.

You can also drizzle a small amount of honey over the platter.

Do not use too much rosemary. One small leaf is enough for color and flavor.

My Best Tips

Keep the Pastry Cold

Cold puff pastry rises better.

If the pastry becomes warm while assembling the bites, place the filled pan in the refrigerator for 10 to 15 minutes before baking.

Use Small Brie Cubes

Large pieces melt over the sides.

Small cubes give you enough cheese without creating a mess.

Do Not Overfill

One teaspoon of cranberry sauce is usually enough.

Overfilled cups may spill and stick to the pan.

Grease the Pan Lightly

A little grease helps the bites release cleanly.

Too much oil can make the pastry feel greasy.

Let Them Rest Before Removing

The filling is very hot when it comes out of the oven.

Waiting five minutes helps the bites stay together.

Serve Warm

These bites taste best while the Brie is still soft.

They can sit at room temperature for a while, but the cheese becomes firmer as it cools.

Can You Make Cranberry Brie Bites Ahead?

Yes.

You can assemble the bites several hours before baking.

Prepare the pastry cups, add the Brie, cranberry sauce, and pecans, then cover the pan and keep it in the refrigerator.

Brush the pastry with egg wash shortly before baking.

For Thanksgiving, I usually assemble them in the morning and bake them when guests are about to arrive.

You can also cut the pastry and Brie one day before. Store them separately in the refrigerator, then assemble the bites the next day.

Can You Bake Them Ahead?

You can bake the bites earlier, but they are best when freshly baked.

If needed, bake them a few hours in advance and let them cool.

Reheat them in a 325°F oven for about five to seven minutes.

Avoid reheating them in the microwave. The pastry can become soft and chewy.

How to Store Leftovers

Place leftover cranberry Brie bites in an airtight container.

Store them in the refrigerator for up to three days.

To reheat, place them on a baking sheet and warm them in a 325°F oven until the cheese softens.

The pastry may not be quite as crisp as it was on the first day, but it will still taste good.

Can You Freeze Cranberry Brie Bites?

Yes, but I prefer freezing them before baking.

Assemble the bites in the mini muffin pan.

Place the pan in the freezer until the bites are firm.

Transfer the frozen bites to a freezer-safe container or bag.

Freeze them for up to one month.

When ready to bake, place the frozen bites back into a greased mini muffin pan.

Bake directly from frozen. Add a few extra minutes to the baking time.

Keep an eye on the pastry so it does not become too dark.

Cranberry Brie Bite Variations

Honey Pecan Brie Bites

Add a small drizzle of honey after baking.

The honey works well with the salty cheese and toasted pecans.

Maple Cranberry Brie Bites

Add a tiny amount of maple syrup over the cranberry sauce before baking.

Use only a little because too much liquid can make the pastry wet.

Orange Cranberry Brie Bites

Add a small pinch of fresh orange zest over the cranberry sauce.

Orange and cranberry taste very good together.

Walnut Brie Bites

Replace the pecans with chopped walnuts.

Toast the walnuts first for a stronger flavor.

Pistachio Brie Bites

Use chopped pistachios instead of pecans.

The green color looks festive beside the red cranberry sauce.

Pepper Jelly Brie Bites

Replace the cranberry sauce with pepper jelly.

This version tastes sweet with a little heat.

Raspberry Brie Bites

Use raspberry preserves instead of cranberry sauce.

This variation works well for parties throughout the year.

Apple Butter Brie Bites

Replace the cranberry sauce with apple butter.

Add a small pinch of cinnamon over the top.

Serving Ideas

Arrange the bites on a large white, cream, or wooden platter.

Leave a little space between them so the pastry does not become soft from trapped steam.

You can decorate the platter with:

  • Fresh rosemary
  • Whole cranberries
  • Apple slices
  • Small bunches of grapes
  • Toasted nuts

Do not place loose decorations too close to the hot bites.

Serve cranberry Brie bites with:

  • Sparkling apple cider
  • Thanksgiving punch
  • Hot tea
  • Coffee
  • Other finger foods
  • Fresh fruit
  • Crackers
  • Small cheese boards

Common Problems

The Cheese Melted Out

The Brie pieces were probably too large.

Use smaller cubes and do not overfill the cups.

The Pastry Did Not Puff

The pastry may have become too warm.

Keep it cold and avoid pressing it too firmly into the pan.

The Bottom Is Soft

Too much cranberry sauce can make the pastry wet.

Use only about one teaspoon per bite.

The Bites Stick to the Pan

The pan may not have been greased enough, or filling may have spilled over.

Let the bites rest for five minutes, then loosen the edges with a thin knife.

The Pastry Is Too Dark

The oven may run hot.

Check the bites several minutes before the suggested baking time.

The Rosemary Flavor Is Too Strong

Use smaller pieces.

Rosemary should be a light accent, not the main flavor.

Frequently Asked Questions

Can I Use Crescent Roll Dough?

Yes.

Crescent dough creates a softer, bread-like bite instead of a flaky pastry bite.

Cut the dough into small squares and use it in the same way.

Can I Use Phyllo Cups?

Yes.

Store-bought phyllo cups work well and save preparation time.

Fill them with Brie and cranberry sauce, then bake until the cheese melts.

Can I Use Another Cheese?

Camembert is the closest replacement.

Cream cheese can also work, but it will not melt in the same way.

Goat cheese gives the bites a stronger, tangier flavor.

Can I Make Them Without Nuts?

Yes.

Leave the nuts out completely or replace them with a few pumpkin seeds.

Should I Use Homemade Cranberry Sauce?

Homemade sauce tastes fresh, but canned whole-berry cranberry sauce also works very well.

How Many Bites Does This Recipe Make?

One puff pastry sheet makes about 24 mini bites.

The exact number depends on how you cut the pastry.

Can I Use a Regular Muffin Pan?

Yes, but the bites will be larger.

Cut bigger pastry squares and increase the amount of filling slightly.

They may also need a few more minutes in the oven.

Final Thoughts

Cranberry Brie bites are small, festive, and full of flavor.

I like serving them at Thanksgiving because they can be assembled ahead and baked just before guests arrive. They also look attractive on a platter without needing complicated decoration.

The main thing I have learned is not to overfill them. A small cube of Brie and one teaspoon of cranberry sauce are enough.

When the puff pastry turns golden and the Brie starts to melt, the bites are ready. Serve them warm, and they usually disappear quickly.
